Authentic Spanish Chickpea and Spinach Stew Recipe (Garbanzos con Espinacas)

Ingredients:

  • 2 tbsp / 30 ml olive oil
  • 3 cloves garlic, finely chopped
  • 1 medium red onion, finely chopped
  • 3 tsp ground cumin
  • 1½ tsp smoked paprika
  • ¼-½ tsp cayenne pepper or hot chili powder
  • ½ tsp salt
  • 2-3 tsp brown sugar
  • Black pepper to taste
  • 2 x 400g tins peeled plum tomatoes
  • 1 tbsp tomato paste
  • 1½ cups cooked chickpeas
  • 200g spinach
  • Handful of almond flakes, toasted (for garnish)
  • Fresh parsley, chopped (optional, for garnish)
  • Cooked rice (brown rice recommended), for serving

Method:

  1. Warm the olive oil in a large frying pan (preferably with a lid) over low heat. Add the chopped onion and sauté until softened and translucent, stirring occasionally.
  2. Add the finely chopped garlic to the pan. Continue to sauté, stirring frequently, until the onion is translucent and the garlic is fragrant and softened, taking care not to burn it.
  3. Introduce all the ground spices (cumin, smoked paprika, and cayenne pepper) to the onion and garlic mixture. Stir well to combine and cook gently for 1-2 minutes, stirring constantly as spices can burn easily. This step enhances their flavor.
  4. Add the tomato paste to the pan and stir it into the spiced onion and garlic mixture, ensuring it’s well incorporated.
  5. In a separate bowl, crush the plum tomatoes with a potato masher. Add the crushed tomatoes to the pan, along with salt and half of the brown sugar. Simmer the sauce uncovered over low heat to allow it to thicken, stirring periodically.
